Sweet Potato & Black Bean Quesadilla

Ingredients
- • 1 large sweet potato, peeled and cubed
- • 1 can (15 oz) black beans, drained and rinsed
- • 1 tsp cumin
- • 1/2 tsp smoked paprika
- • 1/4 tsp chili powder
- • 4 large flour tortillas
- • 1 cup vegan cheddar shreds
- • 1/4 cup red onion, finely diced
- • Salt and pepper
- • Salsa, guacamole, and vegan sour cream for serving

Boil or microwave the sweet potato cubes until tender, about 8-10 minutes. Drain and mash with a fork.

In a small bowl, toss the black beans with cumin, smoked paprika, chili powder, salt, and pepper.

Lay out 2 tortillas. Spread mashed sweet potato on each, then layer with seasoned black beans, red onion, and vegan cheese.

Top with the remaining 2 tortillas and press gently.

Cook in a large dry skillet over medium heat for 3-4 minutes per side until golden and crispy.
