Ingredients

  • • 2 thick slices artisan sourdough bread
  • • 1 large ripe avocado
  • • 1/2 cup cherry tomatoes, halved
  • • 1 tbsp raw pumpkin seeds (pepitas)
  • • 1 tbsp hemp seeds
  • • Juice of 1/2 lemon
  • • Red pepper flakes to taste
  • • Flaky sea salt and cracked black pepper
  • • Extra virgin olive oil for drizzling
  • • Optional: microgreens for garnish

Instructions

Toast the sourdough slices until deeply golden and crunchy.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, a pinch of flaky salt, and pepper.

Mash with a fork to your preferred consistency — chunky or smooth.

Spread the mashed avocado generously onto each toast slice.
