Ingredients
- • 2 thick slices artisan sourdough bread
- • 1 large ripe avocado
- • 1/2 cup cherry tomatoes, halved
- • 1 tbsp raw pumpkin seeds (pepitas)
- • 1 tbsp hemp seeds
- • Juice of 1/2 lemon
- • Red pepper flakes to taste
- • Flaky sea salt and cracked black pepper
- • Extra virgin olive oil for drizzling
- • Optional: microgreens for garnish

Toast the sourdough slices until deeply golden and crunchy.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, a pinch of flaky salt, and pepper.
