Ingredients

  • • 1/2 cup chickpea flour (besan)
  • • 1/3 cup water
  • • 1 tbsp nutritional yeast
  • • 1/4 tsp turmeric
  • • 1/4 tsp garlic powder
  • • 1/4 tsp onion powder
  • • 1/4 tsp kala namak (black salt)
  • • Pinch of black pepper
  • • 1 tbsp olive oil
  • • Fillings: sautéed mushrooms, spinach, diced tomatoes, sliced avocado

Instructions

Whisk together chickpea flour, water, nutritional yeast, turmeric, garlic powder, onion powder, kala namak, and black pepper until smooth. Let batter rest for 5 minutes.

Heat olive oil in a non-stick skillet over medium heat.

Pour the batter into the skillet, tilting to spread evenly into a thin round.

Cook for 3-4 minutes until the edges begin to lift and the bottom is golden.

Add your fillings to one half of the omelette.

Carefully fold the other half over the fillings. Cook for another 2 minutes.
