Ingredients

  • • 1/2 cup old-fashioned rolled oats
  • • 1 cup oat milk (or any plant milk)
  • • 1/4 cup water
  • • 1 tbsp chia seeds
  • • 1 tbsp pure maple syrup
  • • 1/2 tsp ground cinnamon
  • • 1/4 tsp vanilla extract
  • • 1/2 cup mixed fresh berries (blueberries, raspberries, strawberries)
  • • 1 tbsp almond butter
  • • 1 tbsp toasted coconut flakes
  • • Pinch of sea salt

Instructions

Combine the oats, plant milk, water, and a pinch of salt in a small saucepan over medium heat.

Bring to a gentle simmer, stirring occasionally. Cook for 5-7 minutes until the oats are creamy and tender.

Remove from heat and stir in the chia seeds, maple syrup, cinnamon, and vanilla extract.

Let sit for 2 minutes — the chia seeds will absorb some liquid and thicken the oatmeal.

Transfer to a bowl and top with fresh mixed berries, a dollop of almond butter, and toasted coconut flakes.
