# Vegan Shopping List & Pantry Staples

A budget-conscious vegan grocery list and simple pantry plan for easy everyday plant-based meals.

A well-stocked vegan kitchen does not need to be expensive. Begin with foods you already use, then add a few versatile staples. This shopping list is designed for flexible everyday meals rather than a rigid plan.

## Everyday pantry essentials

- **Beans and lentils:** canned chickpeas, black beans, kidney beans, or dried red lentils.
- **Grains:** oats, rice, pasta, couscous, tortillas, and whole-grain bread.
- **Canned goods:** diced tomatoes, tomato paste, vegetable broth, and coconut milk when recipes call for it.
- **Flavor makers:** garlic, onion, cumin, smoked paprika, curry powder, herbs, soy sauce, vinegar, and lemon juice.
- **Fats and toppings:** olive oil or another cooking oil, peanut butter, tahini, nuts, and seeds.

## Fresh and frozen produce

- Bananas, apples, oranges, or seasonal fruit for easy breakfasts and snacks.
- Carrots, onions, bell peppers, tomatoes, and greens for flexible meals.
- Frozen spinach, broccoli, peas, or mixed vegetables for convenient dinners.
- Potatoes and sweet potatoes for satisfying, affordable sides.

## Plant-based proteins

Choose from beans, lentils, chickpeas, tofu, tempeh, edamame, soy yogurt, nuts, and seeds. You don't have to purchase all of them at once; one or two varieties per shopping trip is plenty to start.

## Useful refrigerated items

Fortified unsweetened plant milk, hummus, tofu, and fresh greens are helpful options. Read labels, particularly if you are choosing products for a reliable source of calcium or vitamin B12.

## A simple one-week starter basket

For a small household, a practical starter basket might include oats, a bag of rice, a package of pasta, two or three types of beans or lentils, two packs of tofu or an equivalent preferred protein, frozen mixed vegetables, fresh greens, onions, carrots, bananas, canned tomatoes, tortillas, and fortified plant milk. Adjust amounts for your household and planned recipes.

## Six meals from the same ingredients

1. Banana-peanut butter oatmeal
2. Chickpea and vegetable wraps
3. Tomato-lentil pasta
4. Black-bean rice bowls
5. Tofu and vegetable stir-fry
6. Vegetable soup with beans and toasted bread

## Ways to spend less and waste less

- Check your pantry before shopping and make a list around recipes you will actually cook.
- Compare price per unit; store brands, dry legumes, and frozen vegetables can be economical choices.
- Use a versatile ingredient in several dishes rather than buying a specialty item for one meal.
- Refrigerate prepared dishes promptly and freeze portions you won't eat in time.
