A colorful lunch that is hearty without being complicated: fluffy quinoa, smoky roasted sweet potatoes, golden chickpeas, fresh spinach, and avocado, all finished with a zippy lemon-tahini drizzle. The sweet potatoes and chickpeas roast on one tray while the quinoa cooks, so most of the work happens at the same time.

## Recipe at a glance

- **Servings:** 4 bowls
- **Prep time:** 15 minutes
- **Cook time:** 30 minutes
- **Total time:** 45 minutes
- **Equipment:** Baking sheet, medium saucepan with lid, small bowl

## Ingredients

### For the bowls

- 2 medium sweet potatoes (about 1 lb / 450 g total), scrubbed and cut into ½-inch (1.25 cm) cubes
- 1 can (15 oz / 425 g) chickpeas, drained, rinsed, and patted dry
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- ¾ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon fine salt, divided, plus more to taste
- 1 cup (about 170 g) dry quinoa, rinsed well
- 2 cups (480 ml) water
- 3 packed cups baby spinach (about 90 g)
- 1 ripe avocado, sliced just before serving
- Optional: chopped cilantro or parsley, toasted pumpkin seeds, and lemon wedges

### For the lemon-tahini drizzle

- 3 tablespoons tahini, stirred well
- 2 tablespoons freshly squeezed lemon juice
- 1 small garlic clove, finely grated or minced
- 1 teaspoon maple syrup, optional
- 3–5 tablespoons cool water, to thin
- Pinch of salt, to taste

## How to make roasted sweet potato and chickpea quinoa bowls

### 1. Heat the oven

Preheat the oven to **425°F (220°C)**. Line a large baking sheet with parchment paper for easy cleanup. Cut the sweet potatoes into roughly equal ½-inch cubes so they cook evenly.

### 2. Season and roast the sweet potatoes and chickpeas

Spread the sweet potato cubes and thoroughly dried chickpeas across the baking sheet. Toss with the olive oil, smoked paprika, cumin, garlic powder, and ¼ teaspoon of the salt. Arrange them in one layer, leaving a little space between pieces. Roast for **25–30 minutes**, turning halfway through, until the sweet potatoes are tender and browned at the edges and the chickpeas are lightly golden. Use two baking sheets if the pan is crowded.

### 3. Cook the quinoa

While the tray roasts, bring the rinsed quinoa, 2 cups of water, and the remaining ¼ teaspoon salt to a boil in a medium saucepan. Reduce to low, cover, and simmer for about **15 minutes**, until the water is absorbed. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.

### 4. Whisk the tahini sauce

In a small bowl, stir together the tahini, lemon juice, grated garlic, optional maple syrup, and a pinch of salt. Add cool water **one tablespoon at a time**, whisking until the sauce is smooth and pourable. Tahini may thicken at first; keep whisking and gradually adding water. Taste for lemon and salt.

### 5. Build the bowls

Divide the cooked quinoa and fresh spinach among four bowls. Top with the warm roasted sweet potatoes and chickpeas. Add avocado slices and drizzle each bowl with lemon-tahini sauce. Finish with fresh herbs, pumpkin seeds, or an extra lemon wedge if you like.

## Make it your own

- **Use what you have:** Brown rice or couscous can stand in for quinoa. Cook according to package instructions.
- **Try different greens:** Chopped kale, arugula, or shredded cabbage work well in place of spinach.
- **Add crunch:** A tablespoon of toasted pumpkin seeds or sunflower seeds per bowl adds texture.
- **Keep it budget-friendly:** Skip the avocado or substitute grated carrot; the chickpeas, quinoa, sweet potato, and sauce still make a satisfying meal.
- **Prefer it spicy?** Add a pinch of cayenne to the roasting spices or a dash of hot sauce to the dressing.

## Meal-prep and storage tips

Make the quinoa, roasted sweet potatoes, chickpeas, and dressing ahead of time. Refrigerate cooked components promptly in airtight containers for up to **3–4 days**. Store dressing separately and add the avocado shortly before eating so it stays fresh. The bowls work warm or chilled; if reheating, warm the quinoa and roasted ingredients, then add spinach, avocado, and dressing.
