Ingredients

For the pasta salad

  • 12 oz (340 g) dry farfalle (bow-tie pasta), or another short pasta
  • 2 teaspoons fine salt, for the pasta cooking water
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed (about 1½ cups)
  • 1 cup (about 150 g) cherry tomatoes, halved
  • 1 medium cucumber (about 200 g), diced
  • ⅓ cup (about 50 g) pitted Kalamata olives, halved
  • ¼ small red onion (about 40 g), very finely diced
  • ⅓ cup (about 15 g) fresh flat-leaf parsley, chopped

For the lemon-herb dressing

  • 3 tablespoons (45 ml) extra-virgin olive oil
  • 3 tablespoons (45 ml) freshly squeezed lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1 small garlic clove, finely grated or minced
  • 1 teaspoon Dijon mustard (choose a vegan variety)
  • ¾ teaspoon dried oregano
  • ½ teaspoon fine salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper

How to make the salad

1. Cook the pasta

Bring a large saucepan of water to a rolling boil. Stir in the 2 teaspoons of salt, add the farfalle and cook according to its package directions until just al dente, usually 10–12 minutes. A slight bite helps the pasta hold up once dressed.

2. Cool and drain well

Drain the pasta in a colander, briefly rinse under cool running water for about 20–30 seconds and shake well to remove excess moisture. Transfer to a wide mixing bowl and let cool for a few minutes while you finish the other ingredients. Excess water dilutes the dressing, so drain thoroughly.

3. Whisk the lemon-herb dressing

In a small bowl, whisk together the olive oil, lemon juice, lemon zest, grated garlic, Dijon mustard, dried oregano, ½ teaspoon salt and black pepper until combined.

4. Prepare the vegetables and chickpeas

Drain and rinse the chickpeas. Halve the cherry tomatoes and olives, dice the cucumber, finely chop the red onion and chop the parsley. If the onion tastes particularly sharp, rinse the diced pieces briefly in cold water and drain before using.

5. Toss everything together

Add the chickpeas, tomatoes, cucumber, olives, red onion and parsley to the bowl of cooled pasta. Pour over the dressing and toss gently until the pasta and vegetables are evenly coated.

6. Let the flavors mingle

Set the bowl aside for 10 minutes at room temperature, then taste. Add a small squeeze of lemon or a pinch of salt if needed. The olives are salty, so it is best to make final seasoning adjustments after everything is combined.

7. Serve

Divide among four bowls for lunch or six smaller plates as a side. Serve slightly cool or refrigerate until chilled if preferred. For food safety, do not leave the prepared salad at room temperature for more than 2 hours.

Easy vegan swaps and budget tips

  • Pasta: Rotini, penne or a suitable gluten-free short pasta work well; follow the package cook time and avoid overcooking.
  • Beans: Cannellini beans can replace chickpeas in the same quantity.
  • Vegetables: Swap the cucumber for one diced bell pepper if you are packing the salad several days ahead.
  • Olives: If olives are unavailable, use 1 tablespoon drained capers; taste before adding more salt.
  • Herbs: Use chopped fresh basil instead of parsley, or a mix of the two.
  • Extra richness: Add a little crumbled dairy-free feta when serving, if desired.

Make ahead and storage

Refrigerate the finished salad promptly in a covered container and eat within 3 days. For the freshest texture, store the chopped cucumber and dressing separately if preparing more than a day ahead, then toss them in before serving. Pasta absorbs dressing as it sits; revive leftovers with a small splash of lemon juice and water or a little extra olive oil. Keep chilled when transporting for lunch, and do not freeze: the vegetables lose their crisp texture after thawing.
