**Summary:**

A quick 20-minute, no-cook vegan lunch made with pantry chickpeas, crunchy vegetables and tangy lemon-dill dressing.

A satisfying lunch does not have to involve a stove. These lemon-dill smashed chickpea salad pita pockets are bright, crunchy and creamy, with tender chickpeas, cucumber, juicy tomatoes and a lively lemon-mustard dressing. The filling takes about 20 minutes to make, and the components are easy to pack separately for tomorrow's lunch.

## Recipe at a glance

- **Yield:** 4 servings (8 filled pita halves)
- **Prep time:** 20 minutes
- **Cook time:** 0 minutes (warming the pitas is optional)
- **Total time:** 20 minutes
- **Equipment:** Colander, large mixing bowl, small bowl, fork or potato masher, knife and cutting board

## Ingredients

### For the chickpea salad

- 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed (about 3 cups / 480 g drained)
- ½ cup (75 g) cucumber, seeds removed if watery, finely diced
- ½ cup (80 g) cherry tomatoes, quartered and patted dry
- 1 celery stalk (about 40 g), finely diced
- ¼ cup (40 g) red onion, finely diced
- 2 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh parsley

### For the lemon-dill dressing

- ¼ cup (60 g) vegan mayonnaise
- 2 tablespoons (30 ml) fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 1 teaspoon Dijon mustard (check the label if needed to confirm it is vegan)
- ¼ teaspoon fine salt, plus more to taste
- ¼ teaspoon freshly ground black pepper

### For assembly

- 4 medium whole-wheat pita breads, each cut in half (check the label to confirm they are vegan)
- 2 cups (about 70 g) shredded romaine lettuce
- Optional: extra dill, lemon wedges or hot sauce for serving

## How to make lemon-dill chickpea salad pita pockets

### 1. Drain and mash the chickpeas

Drain both cans of chickpeas in a colander, rinse well and shake off excess water. Transfer to a large bowl. Using a fork or potato masher, lightly crush about two-thirds of the chickpeas, leaving the rest whole for texture. You want a chunky filling, not a smooth purée.

### 2. Make the lemon-mustard dressing

In a separate small bowl, whisk together the vegan mayonnaise, lemon juice, lemon zest, Dijon mustard, salt and black pepper until smooth. Taste; it should be tangy enough to brighten the beans. Set aside while you prepare the vegetables.

### 3. Chop the vegetables and herbs

Finely dice the cucumber, quarter the cherry tomatoes, dice the celery and red onion, and chop the dill and parsley. Pat the cucumber and tomatoes dry with a paper towel if they are especially juicy. Smaller pieces make the pockets easier to fill and eat.

### 4. Mix the filling

Add the cucumber, tomatoes, celery, red onion, dill and parsley to the mashed chickpeas. Pour over the dressing and fold gently until everything is evenly coated. Taste and add a small pinch of salt or another squeeze of lemon if needed.

### 5. Prepare the pita pockets

Cut each pita across the middle to make two halves and gently open each half into a pocket. If your pitas feel stiff, briefly warm them in a dry skillet for about 20–30 seconds per side or in a microwave for 10–15 seconds, until pliable. This warming step is optional and is not included in the listed cook time.

### 6. Fill and serve

Tuck some shredded romaine into each pocket, then spoon in the chickpea mixture, dividing it evenly among the eight halves. Add extra dill, a squeeze of lemon or hot sauce if you like. Serve immediately while the lettuce is crisp and the pitas are soft.

## Tips for a fresh, satisfying lunch

- **Don't mash every chickpea.** A mix of creamy and whole beans gives the salad a more appealing bite.
- **Remove excess moisture.** Pat chopped cucumber and tomatoes dry before adding them to the dressing so the pita doesn't turn soggy.
- **Keep pitas separate for packed lunches.** Pack the salad, lettuce and bread in different containers and assemble just before eating.
- **Make it a bowl.** Spoon the filling over lettuce or cooked grains if you don't have pita bread.

## Easy substitutions

For a mayonnaise-free version, substitute ¼ cup (60 g) plain unsweetened plant-based yogurt for the vegan mayonnaise; the dressing will be lighter and slightly tangier. If fresh dill is unavailable, use 2 teaspoons dried dill, starting with a little less and adjusting to taste. Finely chopped bell pepper can replace the celery, and green onion can stand in for the red onion. Any soft vegan sandwich bread or a tortilla can replace the pita—just serve the filling as a sandwich or wrap instead.

## Make ahead and storage

Transfer leftover chickpea salad to a covered container and refrigerate promptly. Use within 3 days for the best texture and freshness. Keep pita and lettuce separate until serving; assembled pockets are best eaten soon after filling. Do not leave the dressed salad unrefrigerated for extended periods. Stir before serving if a little liquid separates.
