**Summary:**

Four warm tofu scramble wraps with peppers, spinach and salsa, ready in about 35 minutes. A simple egg-free vegan breakfast or light lunch.

A warm tortilla makes a simple home for soft, golden tofu, sweet peppers and a handful of spinach. Cook the vegetables first, then crumble in the tofu: that small change keeps the filling flavorful instead of watery. Salsa brings the final tang without another sauce to make.

**Serves:** 4 (one large wrap each) · **Prep:** about 15 minutes · **Cook:** 15–20 minutes · **Total:** about 35 minutes.

## Ingredients

- 1 block firm tofu, 14 oz / 400 g, drained and patted dry
- 1 tablespoon / 15 ml olive or neutral oil
- 1 medium onion, about 5 oz / 150 g, diced small
- 1 medium red bell pepper, about 5 oz / 150 g trimmed, diced small
- 2 garlic cloves, minced
- ½ teaspoon ground turmeric
- 1 teaspoon smoked paprika
- 2 tablespoons / about 10 g nutritional yeast
- ¼ teaspoon fine salt, plus more to taste
- ¼ teaspoon ground black pepper
- Up to 3 tablespoons / 45 ml water, as needed
- 3 loosely packed cups / 90 g baby spinach
- 4 large 10-inch / 25 cm vegan tortillas, whole-wheat or plain
- ½ cup / 120 g tomato salsa, for serving

Check the tortilla label for lard, milk or other animal ingredients. Nutritional yeast is a savory seasoning, not baking yeast. This recipe contains soy and, with wheat tortillas, wheat.

## Make the wraps

1. **Prepare the tofu.** Pour off the package liquid and pat the block dry with a clean towel. Crumble it into bite-sized pieces with your hands or a fork. A long press is unnecessary for this soft scramble.
2. **Soften the vegetables.** Heat the oil in a large nonstick skillet over medium heat. Add the onion and pepper. Cook for 7–9 minutes, stirring regularly, until softened. If they start catching, lower the heat and add a small splash of the measured water.
3. **Add the seasoning.** Stir in the garlic, turmeric and smoked paprika for about 30 seconds, just until fragrant.
4. **Cook the tofu.** Add the crumbled tofu, nutritional yeast, salt and black pepper. Stir gently for 5–7 minutes, keeping some larger curds. Add the remaining measured water a tablespoon at a time only if the mixture looks dry. It should be moist, not soupy.
5. **Wilt the spinach.** Fold in the spinach and cook for about 2 minutes, until wilted. Continue briefly if needed until excess liquid has evaporated. Taste and adjust salt and pepper.
6. **Warm and fill.** Warm the tortillas according to the package directions while the filling finishes. Divide the scramble among them, keeping a border clear. Add 2 tablespoons / 30 g salsa to each, or serve it alongside. Fold in the sides and roll snugly. Serve immediately.

## Beginner tips and easy substitutions

- **Avoid soggy wraps:** let excess liquid cook away before filling, and keep salsa on the side for packed meals.
- **Firm tofu works best:** extra-firm also works but may need a little more water. Silken tofu breaks down much more easily and is not a direct swap here.
- **No nutritional yeast?** Leave it out. The flavor will be less savory, so taste before adding more seasoning.
- **Use what you have:** replace fresh pepper with the same weight of frozen diced pepper; cook off its extra moisture before adding tofu. Regular paprika can replace smoked paprika.
- **Gluten-free option:** use certified gluten-free tortillas that roll well, and check all packaged ingredients. Smaller tortillas will make more, smaller wraps.

## Budget and make-ahead notes

Store-brand tofu, tortillas and salsa keep the ingredient list affordable. A bag of frozen diced peppers avoids buying more fresh peppers than you need. No specialty vegan cheese or egg replacement is required.

For breakfast prep, cook the filling ahead and store it separately from the tortillas and salsa. Reheat only the portion you need, then assemble so the wrap stays soft rather than damp.

## Storage and reheating

Refrigerate the filling promptly in a shallow covered container, within 2 hours of cooking, or within 1 hour when the surrounding temperature exceeds 90°F / 32°C. Keep the refrigerator at 40°F / 4°C or below and use the filling within 3–4 days. Do not leave it on the counter until completely cool.

Reheat the filling to 165°F / 74°C, checked with a food thermometer. Stir during microwave reheating, allow standing time and check several spots. Warm tortillas separately and assemble with salsa just before eating.
