## How to make crispy tofu burrito bowls

### 1. Cook the rice

Put the rinsed rice, 1¾ cups water, and ¼ teaspoon salt into a saucepan. Bring to a boil, reduce the heat to low, cover tightly, and cook for about 15–18 minutes, until the liquid is absorbed and the grains are tender. Turn off the heat and let stand, covered, for 5 minutes. Fluff gently with a fork, then stir in the lime juice, lime zest, and 2 tablespoons cilantro.

### 2. Season the tofu

While the rice cooks, tear or cut the well-dried tofu into roughly ¾-inch (2 cm) pieces. In a bowl, mix the cornstarch, smoked paprika, chili powder, cumin, garlic powder, and ½ teaspoon salt. Toss the tofu in the seasoning until lightly and evenly coated.

### 3. Crisp the tofu

Heat 1 tablespoon neutral oil in a large nonstick skillet over medium-high heat. Arrange the tofu in a single layer and cook for 8–10 minutes, turning every couple of minutes, until most sides are deeply golden and crisp. Work in two batches if your skillet is small; crowding the pan makes the tofu steam instead of brown. Transfer to a plate.

### 4. Char the corn and warm the beans

Add 1 teaspoon oil to the same skillet. Add the thawed, dried corn in an even layer and cook over medium-high heat for 4–5 minutes, stirring once or twice, until some kernels turn golden. In a small saucepan or microwave-safe bowl, heat the drained black beans with 2 tablespoons water and ¼ teaspoon cumin until steaming hot, about 2–3 minutes on the stovetop or 1–2 minutes in the microwave; drain away any excess liquid before assembling.

### 5. Make the quick tomato salsa

Mix the diced tomatoes and red onion with 1 tablespoon lime juice and ¼ teaspoon salt. Let the salsa stand for a few minutes so the flavors mingle. If it releases a lot of liquid, use a slotted spoon when serving.

### 6. Whisk the dressing

In a small bowl, stir together the dairy-free yogurt, 2 tablespoons chopped cilantro, 1 tablespoon lime juice, maple syrup, ¼ teaspoon garlic powder, 1 tablespoon water, and a pinch of salt. Add another teaspoon or two of water if you prefer a thinner, drizzleable sauce. Taste and adjust the lime or salt.

### 7. Build and serve the bowls

Divide the cilantro-lime rice among four bowls. Top each with a quarter of the tofu, warmed black beans, charred corn, and tomato salsa. Add freshly sliced avocado, drizzle with cilantro-lime dressing, and serve with a lime wedge. Finish with extra cilantro or hot sauce if you like.

## Practical tips for the best results

- **Dry the tofu well.** Press it between clean kitchen towels for 10 minutes while prepping other ingredients; less surface moisture helps it brown.
- **Don't skip the cornstarch.** A thin coating gives pan-fried tofu a light, crisp exterior without deep-frying.
- **Choose unsweetened yogurt.** Sweetened or vanilla-flavored plant yogurt will make the savory dressing taste off; plain soy or coconut yogurt works well.
- **Use canned corn when convenient.** Drain and pat it dry before adding to the skillet for more golden spots.
- **Make it spicy at the table.** The base recipe is gently seasoned; hot sauce or a pinch of cayenne makes it easy to personalize.

## Budget-friendly swaps

Use brown rice instead of white rice if you prefer, following the water ratio and longer cooking time on its package. For an even quicker dinner, use pre-cooked rice and heat it thoroughly before adding the lime and cilantro. If tofu is unavailable, substitute 1½ cups cooked edamame or an extra can of black beans, warming them with the same spices. Shredded lettuce or finely sliced cabbage can replace some of the avocado for extra crunch at a lower cost. For the sauce, vegan mayonnaise thinned with water and lime is an alternative to plain plant yogurt.

## Make ahead and storage

Store the cooled rice, tofu, beans, corn, salsa, and dressing in separate covered containers in the refrigerator for up to 3 days. Cool cooked rice promptly and refrigerate it within 1 hour. Reheat rice, tofu, beans, and corn until piping hot, then add chilled salsa, dressing, and freshly sliced avocado. For the best crispness, reheat tofu in a dry skillet for a few minutes rather than microwaving it. The avocado is best cut just before serving.
